Leaving Thrace - Bulgarian Food Heritage and Moving Peoples

Thrace is a region defined by fertile soils, ancient history, and conflict. It is an access point for migration to and from Europe, moving peoples bringing their traditions and cultures through with them. While growing numbers of people leave the villages to find jobs in urban centers, cultural heritage is still performed and can be seen in the food traditions practiced, drawing on ideas and recipes dating back to the time when the region was not divided by borders.
