La Matanza !
LA MATANZA: In Huajuapan de León; Oaxaca celebrates "La Matanza" of goats. An ancestral and cultural tradition dating back to the 17th century and, now this ritual is expected year after year to elaborate the "Mole de Cadera" traditional dish of the region and the State of Oaxaca.
