Anchovies and Liver: The living past in Turkey’s culinary future

I spent two years in Turkey researching how food traditions have been impacted by past migrations of peoples. This photo story, selected from a larger story of 25 images, represents the core of what I found. Food is integral to Turkish culture and changes in the greater culture can be felt through what happens in markets and with street vendors. Food has deep roots in the past and shifting beliefs can radically alter the perception of a staple food so that it can transform or be forgotten. The same can be said about ideologies, identities, and peoples.
