Festa do Pulpo

Many miles from the seaside, in Spanish Galicia, one can stumble upon a local park full of people gathering around large copper cooking pots. Inside, below the bubbling foam, grey and slimy octopus changes its colour. Once it reaches the right shade it is rescued by a hooked rod and immediately sliced with scissors.
